GLOSSARY OF PANS
Regular Pizza Pan
All aluminum baking pan. Typically used for producing thin and medium crust pizzas.
Perforated Pan
Pan with perforations in the bottom. Manufactured in aluminum and black metal (better heat
conductor). Produces a slightly crustier pizza. You must stretch pizza before placing on this
pan or product may stick on perforations/holes.
Pizza Screen
Flat wire mesh round or square pans. Produces a crispier pizza. You must stretch and dock
pizza before placing on screen or product will stick in perforations/screen.
Deep Dish Pan
Approximately ╜" to 1" in thickness. Usually manufactured in black metal (better heat
conductor). Used for a thick and chewy or "Sicilian" style pizza.
Sheet Pans
Flat aluminum pans: Full Sheet Pans measure 18" x 26" x 1" (inside dimensions)
Half Sheet Pans measure 18" x 13" x 1" (inside dimensions)
Note: If baking in a convection oven, crusts bake more evenly/crispier when
using a perforated pan or pizza screen.
